We begin our journey along the RP 301 toward the Jesuit Site of San José de Lules, a colonial treasure that preserves the spirit of the early days of the Spanish conquest. There, the brothers of the Society of Jesus founded one of the oldest educational centers in the country, which housed Argentina's first public school. This site, declared a National Historic Monument, also witnessed an agricultural milestone: the first sugarcane plantation in Argentina. We continue to Simoca, a town whose name comes from the Quechua word shimukay, which evokes a "place of peace and silence." But every Saturday, the town transforms with the legendary Simoca Fair, a veritable festival of flavors, colors, and sounds. Here, the aromas of regional foods—empanadillas, wedding cake, and rosquetes—mingle with handicrafts, sugarcane syrup, and typical local products. Most fascinating: bartering continues to this day. Among locals, exchanging a dozen eggs for a piglet remains a daily practice that keeps the ancestral identity of this corner of Tucumán alive.
